Pork loin is cost-effective and also easy to prepare. Once joint is cooked, rest it in the warm place for at least 20 minutes. By definition, pork loin is a wide cut of pig meat created from the tissue along the dorsal side of its rib cage. Place the pork skin side up onto the trivet which should line the base of the tray. Reduce temperature to 180C / fan 160C / gas 4 and cook for 25-30 minutes per 450g.Another nice addition can be a Bramley apple peeled and quartered. Make a trivet by roughly chopping equal amounts of onion, carrot and celery (or our preferred choice of celeriac, the root of the celery) plus a bay leaf, sprig of thyme and a few black peppercorns.Season with good quality fine sea salt rubbed into the score marks on the skin, just prior to cooking.Choose a large, heavy-based roasting tray, ideally with deep sides and handles for easy movement. The internal temperature of the pork loin should be 145F. You can use a meat thermometer to check for doneness.
